June Cooking Class: Strawberry Freezer Jam With Sis. Kanahele

This month, we had two cooking demonstrations. The manapua was first followed by strawberry freezer jam by Sis. Kanahele.

Sis. Kanahele uses fresh strawberries to make her jam. Her family just loves it. She has been making it for years. Sis. Kanahele says it is a fun cooking activity to do with children.
Her recipe is taken from inside the pectin box.
Here is close up of the pectin in case you want to go out and buy some.
She cleans her strawberries just prior using them. She then adds them to the food processor.
Don't process it all the way, leave some chunks in there.
Slowly add the sugar.
Then the pectin that has been cooked on the stove according to the package.
Everyone was treated to a nice little jar of the strawberry freezer jam to take home.
But we were in for even a better treat. Sis. Kanahele made a batch last night for us to try
on the Manager's Special. In the Kanahele home, they have the Manager's Special --- waffles, with ice cream and this yummy jam over it! What a treat! Carson made the waffles, and Candice assisted Sis. Kanahele, and I think Bishop watched the twins. What a family! Thanks to the entire Kanahele family.

June Cooking Class: Baked Manapua with Bro. Chan

We were so fortunate to have Bro. Chan teaching us this evening. He showed us how to make baked manapua. It was so incredibly delicious that it really inspired me to want to go home and make some too. I have never tasted manapua so delicious. Bro. Chan showed us how to make the small manapuas, it was the perfect size.

Here is the baked char siu manapua.

And here is the baked hotdog manapua.
So this is how it is done.
After the dough is ready, roll it into a log. Sorry the pictures are sometimes a little blurry, because Bro. Chan moves fast. He is very experienced, so everything is so quick.
Keep rolling out your log till it is about this long.
Use a scale and weigh each piece. Each piece should be 2 ounces.
Here are the cut pieces, ready to roll into balls.
Roll each piece into nice little balls.
Then flatten each ball with your hand and roll out a nice little circle.

Using a cookie scoop, measure one spoon onto the circle
Roll up the sides to close gap
Roll again so that the bottom closes nicely.
Add waxed paper to the bottoms and there you have your first manapua.
Next Bro. Chan showed us how to make hotdog manapua. Using the same two ounce balls, roll out to a long snake. Wrap it around a hotdog.

and then begin another snake and repeat the process.


Thanks Bro. Chan, If you weren't at the cooking class, you certainly missed out because this manapua was so good, I felt like I was in manapua heaven. And I usually don't even like my manapua baked. You are so wonderful, Bro. Chan!
