Cooking Class: Pizza

This month, Candy taught us how to make pizza. Here she is making the Margarita and Shrimp Pizza. This pizza was named after Queen Margarita of Italy. The Italians made this pizza using red, white and green, the colors of the country that is seen on their flag. So Candy used red: roma tomatoes, White: cheese, and green: basil
into the oven....
Here are the sisters who came out.
The Margarita pizza....

The pizza dough recipe is from Wolfgang Puck:
Makes four 8-inch pizzas:

1 Tablespoon active dry or fresh yeast
1 teaspoon honey
1 cup warm water (105 F - 115 F)
3 cups all-purpose flour
1 teaspoon kosher salt
1 Tablespoon extra virgin olive oil, plus more for brushing

In a small bowl, dissolve yeast and honey in 1/4 cup of the warm water.

2. In a mixer fitted with a dough hook, combine the flour and the salt. Add the oil, yest mixture, and the remaining 3/4 cups of water and mix on low speed until the dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes.

3. Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a warm spot.

4. Place a pizza stone on the middle rack of the oven and preheat the oven to 500 F.

5. Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, un-floured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let it rest for 15 - 20 minutes. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.

6. To prepare each pizza, dip the ball of dough into flour, shake off the excess flour, place the dough on a clean lightly floured surface, and start to stretch the dough. Press down on the center, spreading the dough into an 8 -inch circle, with the outer border a little thicker than the inner circle. If you find this difficult to do, use a small rolling pin to roll out the dough. Lightly brush the inner circle of the dough with oil and arrange the toppings of your choice over the inner circle.

7. Using a lightly floured baker's peel or a rimless flat baking ray,slide the pizza onto the baking stone and bake until the pizza crust is nicely browned, 10 - 12 minutes. Remember that the oven is very hot and be careful as you place the pizza into and out of the oven. Transfer the pizza to a firm surface and cut into slices with a pizza cutter or very sharp knife. Serve immediately.

Margarita and Shrimp Pizza:
1. Brush a little bit of extra olive oil on top of pizza dough.
2. Put a thin layer of pizza sauce.
3. Put roma tomato slices and shrimp on top.
4. Put shredded mozallera cheese or fresh mozzarella slices on top.
5. Season with salt and black pepper.
6. Bake pizza for about 15 minutes.
7. Place fresh basil leaves on top before serving.

Here is the dessert pizza.


Candy's Chocolately Tropical Sweet Pizza
1. Drain canned pineapple slices and peach.
2. Cut pineapple and peach in small chunks. And then,use a paper towel to pat dry the fruits.
3. Mix 8 ox. ricotta cheese and 1/4 cup honey together. IF you like it sweeter, add more honey.
4. Brush melted butter on pizza dough.
5. Bake plain pizza for 15 minutes or until light golden brown.
6. Let it cool for 15 minutes.
7. Melt 4 oz. chocolate chips. Cool.
8. Spread honey-ricotta mixture on pizza dough. Remember to leave e a 1" edge.
9. Put fruit chunks on top.
10.Drizzle melted chocolate on op.
11. Put coconut flakes on top, Enjoy!

Here is the Chicken, Spinach, and Garlic pizza:


Chicken, garlic and spinach Pizza:
1. Thaw spinach and squeeze out liquid
2. Brush a little bit of extra olive oil on top of pizza dough
3. Put a thin layer of Alfredo sauce
4. put chicken chunks, spinach, chopped garlic and thinly sliced onion all over the sauce.
5. put a little salt and black pepper on top.
6. Put shredded mozzarella cheese and grated Parmesan cheese on top.
7. Bake pizza for 15 minutes.


Here is the Spicy Sausages and mushroom pizza:



Spicy Sausage and mushroom Pizza:
1. Cook sausage in a hot pan. Drain oil. (Don't break the sausage too much when cooking it. You want to have sausage chunks.)
2. Brush a little bit of extra olive oil on top of pizza dough.
3. Put a think layer of pizza sauce on top.
4. Put cooked sausage chunks, thinly sliced mushrooms (cooked or raw), and thinly sliced onion all over the sauce.
5. Put a little salt and black pepper.
6. Put cheese on top.
7. Bake pizza for 15 minutes.
